Hello. I am a Zymologist ( also known as a fermentation scientist) involved in the study and use of fermentation processes for the cheese industry.
I hold a phd in Biochemistry and travel a lot thanks to my work in the fermentation field.
In my spare time I like to design and make my own chess sets and not surprisingly I use cheese as a medium to create some of my sets.
A good cheese can make very beautiful and unique sets.
It is a form of temporary art as many of the cheeses I use will eventually break down and the set will fall apart, I think of it as a metaphor for life.
Cheese is life.
